Ingredients
1 onion
2 stalks of celery
2 carrots
2 zucchini
1 bunch fresh spinach
2 tablespoons frozen peas
2 potatoes
1 tablespoon coarse salt
1 handful of parsley
Directions
Clean the vegetables and chop the celery, carrots, potatoes and zucchini into large pieces.
Mix them with other ingredients and put them in a pressure cooker with water and salt.
Place on heat and cook, from the hiss, for 15/20 minutes.
Strain the broth through a strainer and keep the vegetables (which will be useful to prepare a soup or to heat and serve as an accompaniment to other dishes) in the refrigerator for 2 / 3 days.
